Courgette tagliatelle with garlic, chilli, aged pecorino, sunflower seeds & anchovy

Curried smoked haddock with spiced fish pastille, pickled cucumber, crisp onions & coriander

Mackerel fillet with crushed charlotte potatoes, smoked mackerel velouté, brown shrimps, apple & dill

Chilled aubergine purée with Galotyri fresh sheep’s cheese, roast grelot onions, harissa & nuts

Stuffed artichoke with tomato fondue, steamed herb rice & cèpes

Grouse with cèpes, spiced carrot purée & wild blueberries

Pot roast Cornish hake à la Provençale with fresh coco beans & Dorset cockles.  

Stone bass with crab and scallop ravioli, bisque sauce, samphire & ginger
