Liao Fan Hong Kong Soya Sauce Chicken Rice & Noodle, Singapore #OneMichelinStar

What Michelin say, “Always a queue. Offers Cantonese soya sauce chicken and BBQ pork.”

Michelin star ‘Hawker’ food, the big story when Michelin published their first guide in Singapore was them awarding two “hawker places” stars - Hill Street Tai Hwa Pork Noodle (here) and Liao Fan Hong Kong Soya Sauce Chicken Rice & Noodle (make sure you go to the original on level 2 of the Chinatown Food Complex, not the place on Smith Street itself). People regularly queue for anything between 1 to 2 hours.

Shisen Hanten, Singapore #TwoMichelinStars

What Michelin say, “The Mandarin Orchard hotel plays host to the first overseas branch of this Sichuan restaurant group from Japan. Crystal chandeliers and high ceilings add a certain grandeur to a room which is perched on the 35th floor - ask for a window table for the city views. The Sichuan specialities include steamed fish with diced hot red peppers and stewed beef in hot pepper sauce - but it is Chen's Mapo doufu which is not to be missed.
